Recipe Ingredients for eggplant sauce

1 large eggplant
1 onion
2 cup mushrooms
1 pkg frozen spinach
4 cloves garlic
1 bell pepper
28 oz chopped tomatoes
4 carrots
2 stalks celery
1 tbsp olive oil

Recipe Directions for eggplant sauce

  1. peel, cube and salt the eggplant

  2. rinse

  3. squeeze the water out of the eggplant with a potato ricer

  4. saute the mushrooms, onion and eggplant in the olive oil

  5. add everything else and bake for a while
