1 small eggplant
2 carrots
3 bell peppers
1 zucchini
1 yellow squash
1 stalk celery
1 onion
28 ounce crushed tomatoes
1 clove garlic
2 tbsp olive oil
3 tbsp basil
1 tsp thyme

Recipe Directions for eggplant sauce

  1. chop the veggies

  2. roast them for quite a while til soft

  3. put them in a casserole dish with the tomatoes

  4. salt, pepper and whatever to taste
