Delicious eggplant and onion sandwich

Recipe Ingredients for Eggplant Sandwich

2 slices bread
2 tbsp mozzarella cheese
2 slices eggplant
2 slices onion
2 tbsp butter

Recipe Directions for Eggplant Sandwich

  1. Preheat oven to 451 degrees

  2. Place two 1/4 inch thick slices of eggplant between two sheets of paper towel and let drain for 15 minutes.

  3. Place eggplant slices on baking sheet and place in oven for 10 minutes.

  4. Cook onion in frying pan on medium heat with 1 tbsp butter until soft. (About 10 min)

  5. Butter both slices of bread with 1 tbsp butter and place buttered sides down on frying pan. Sprinkle cheese and place onion and eggplant on bread. Warm on pan until cheese is melted.

  6. Close sandwhich and enjoy!
