Eggplant Sandwich Recipe

The most delicious sandwich ever!

Recipe Ingredients for eggplant sandwich

5 mushrooms
1 white onion
1 red bell pepper
1 eggplant
1 tsp olive oil
2 tbsp olive oil
2 cups basil
2 cloves garlic
1 oz. lemon juice
1/2 cup almonds
4 kaiser rolls
1/4 cup water

Recipe Directions for eggplant sandwich

  1. finely chop the mushrooms

  2. dice the onions

  3. in a saute pan add 1 tsp olive oil, then saute the mushrooms and onions

  4. cut the eggplant into 1/4 inch slices

  5. cut the bell pepper in half lengthwise

  6. brush both the eggplant and bell pepper with olive oil and but in the oven on high broil for 10 minutes.

  7. While the eggplant is roasting put the garlic, basil, the juice of 1/2 a lemon and the water in a blender.

  8. Once blended, add the almonds and blend until smooth.

  9. When 10 minutes is up, take the bell pepper out and put in cold water.

  10. flip the eggplant and broil for another 10 minutes.

  11. Peel the skin off of the red bell peppers

  12. Once the eggplant is done, cut the rounds into half

  13. Put the basil mixture on either side of the kaiser roll

  14. Add whatever (ALL!) of the vegetables

  15. enjoy
