Recipe Ingredients for Eggplant Salad Shells

1 medium eggplant (peeled & cut into 1/2 inch cubes)
1 1/2 oz onion, chopped
1 1/2 oz celery, chopped
1/4 cup olive oil
14 oz canned tomatoes, with juice
3 tablespoons red wine vinegar
2 tablespoons tomato paste
1 teaspoon sugar
1/2 teaspoon salt
1 dash Red Pepper (cayenne)
1 tablespoon fresh parsley, chopped
1 tablespoon capers, drained
2 1/2 oz black olives, sliced
2 tablespoons toasted pine nuts
4 oz pasta shells (conchiglioni)

Recipe Directions for Eggplant Salad Shells

  1. In a large frying pan cook eggplant, onion, and celery in hot oil, covered, over medium heat for 5 to 8 minutes, or just till tender, stirring occasionally

  2. Stir in the undrained tomatoes, wine vinegar, tomato paste, sugar, salt, and red pepper. Cook, uncovered, over low heat for 5 minutes, or to desired consistency, stirring occasionally.

  3. Remove from heat. Stir in parsley and capers. Cool.

  4. Cover and refrigerate for 2-24 hours

  5. Let the eggplant mixture stand at room temperature for 30 minutes. Stir in the olives and pine nuts.

  6. Meanwhile, in a large sauce pan or pasta pot bring 12 cups water to boiling. Add pasta shells. Reduce heat slightly. Boil, uncovered, for 23-25 minutes, stirring occasionally.

  7. Drain. Rinse with cold water;drain again. Pat dry with paper towels

  8. To assemble, fill each shell with equal amounts of the eggplant mixture. Serve immediately
