Recipe Ingredients for Eggplant rounds

1 large eggplant
1 large tomato
1/2 cup Mozzarella - fat free
1/3 cup feta cheese
1/2 tsp basil
1 pinch pepper
1 pinch salt
1 tsp garlic powder

Recipe Directions for Eggplant rounds

  1. Cut 1/3" slices of eggplant. Sprinkle with salt and place in collander in a bowl to draw out water. (about 3 or more hours)

  2. Rinse eggplant briskly pat dry with paper towel.

  3. Spray olive oil on baking sheet, place eggplant on it. Sprinkle salt, pepper and garlic powder.

  4. Broil each side for 5 minutes until brown. Put slices to the side.

  5. Repeat seasoning and broiling with tomatoe slices.

  6. Stack 1 tomato slice on a slice of eggplant.

  7. Mix cheeses and basil.

  8. Put even cheese amount on each eggplant, tomato stack.

  9. Broil for 2-3 minutes until cheese is bubbly.
