Recipe Ingredients for Eggplant rotini

2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
12 cup Organic Tomato Basil Marinara
2 medium (2-1/2" dia) Onions
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
8 oz Mushrooms
3 medium Squash, Summer, Zucchini, Includes Skin
2 cup Yellow Squash
4 tbsp Olive Oil
4 link Spicy Italian Chicken Sausage
112 serving Trader Giotto's fat free ricotta
64 tbsp Parmesan, Grated Cheese
96 oz Spinach
64 oz Mushrooms
8 medium (2-1/2" dia) Onions
12 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for Eggplant rotini

Saute veggies in olive oil, add sausage (you can do without sausage and keep it vegetarian). Add sauce and let simmer for a half hour or so. Slice eggplant into 14" slices and microwave for a few minutes so that it is soft enough to roll. Fill slices with two tablespoons of ricotta mixture and roll. Place half of the sauce iin bottom of large glass or ceramic dish and arrange eggplant rolls, then cover with the rest of the sauce. Cook covered for about 30 minutes then add mozzarella and cook for another until cheese is melted and browned
