Recipe Ingredients for eggplant rollatini

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
0.75 cup Marinara Pasta Sauce
1 tbsp Olive Oil
1 large Egg, Whole
8 oz Ricotta, Part Skim Milk Cheese
1 cup, shredded Mozzarella, Part Skim Milk, Low Moisture Cheese
0.25 cup Parmesan, Grated Cheese

Recipe Directions for eggplant rollatini

  1. slice eggplant lengthwise into long thin slices, about 8 slices total.

  2. brush slices with oil and place on rimmed baking sheet in 450 degree oven, brushing with oi.

  3. roast eggplant, turning sheets so eggplant cooks evenly, until it begins to brown, about 12-15 minutes. Cool slightly. Reduce oven temp to 400 degrees.

  4. Place 1/4 c of marinara sauce on bottom of 8X8 pan.

  5. Whisk together egg, ricotta, 1 tsp oregano, 1/2 c of mozarella and dash of pepper.

  6. Place about 3 T of cheese mixture on one end of a slice of eggplant, roll it up & transfer it to the prepared baking dish. Repeat with remaining eggplant and cheese mixture.

  7. Top eggplant rolls with remaning marinara sauce. Sprinkle with remaining eggplant and mozarella. Sprinkle with remaining parmesan.

  8. Bake until cheese has melted and sauce is bubbling, 20-25 minutes. Let stand for 5 minutes before serving.
