Recipe Ingredients for Eggplant Rollatini

32 ounces Tomato & Basil
2 eggplants
2 eggs
26 ounces ricotta cheese
1/2 cup mozzarella cheese
8 tablespoons parmesan cheese

Recipe Directions for Eggplant Rollatini

  1. take excess moisture from eggplant by sprinkling salt and letting moisture come through, rinse and pat dry. grill for 4 minutes on each side and set aside. Meanwhile, take ricotta cheese and blend with eggs, then add mozzarella and parmesan. then add chopped fresh basil and blend just to combine. Preheat oven to 375.

  2. Please a heaping tablespoon of cheese mixture to each slice of eggplant on one end, roll up and set in baking pan with seam side down. Repeat until all eggplants have been filled and laid out in 9 by 13 plan. Evenly distribute tomato sauce over all eggplant pieces, top with parmesan cheese and mozzarella optional. Bake uncovered in oven for 30 minutes or until cheese melts.

  3. Serve with pasta. Add 220 more calories for one serving of pasta.
