Eggplant 1 serving = 2 rolled eggplant

Recipe Ingredients for Eggplant Rollatini

2 eggplant, peeled (yield from 1-1/4 lb) Eggplant
1 cup Ricotta, Part Skim Milk Cheese
1 medium (2-1/2" dia) Onions
1 cup, diced Celery
3 clove Garlic
0.5 cup Tomato Products
0.33 cup, shredded Fontina Cheese

Recipe Directions for Eggplant Rollatini

  1. Peel eggplant

  2. Slice, lengthwise, into 6 slices each

  3. Spray /w cooking spray

  4. Broil one side only until tender and light brown

  5. Remove from broiler and let cool

  6. Saute onions and celery in 1 tsp olive oil

  7. Mix ricotta cheese, garlic, onion, celery, 1 tsp parsley, 1 tsp oregano and 1 tsp basil

  8. Spread mixture onto each unbroiled side of the eggplant slices

  9. Roll up and place seam-side down in a sprayed baking pan

  10. Mix tomato sauce, 1/8 tsp cayenne pepper, 1 tsp garlic powder, 1 tsp pepper, 1/4 tsp salt

  11. Pour over rolled eggplants

  12. Top with shredded fontina cheese and parmesan cheese

  13. Bake at 375 for approx 30 minutes
