Recipe Ingredients for Eggplant Rollatini

2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
10 oz Spinach
1.5 cup Part Skim Ricotta
0.5 cup leaves, whole Basil, Fresh
1 large Egg, Whole
1 large Egg, White
2 serving Minced In Oil Garlic
2 cup Sauce, Pasta, Spaghetti/marinara, Ready-to-serve
1 cup Reduced Fat Mozzarella Shredded Cheese
12 oz Meal Starters Grillers Recipe Crumbles
1.5 cup pieces Mushrooms

Recipe Directions for Eggplant Rollatini

  1. Preheat oven to 350 degrees. Cut eggplant into 8 slices lengthwise and bake for 10 minutes, flip and bake for another 10 minutes. Leave oven on.

  2. Mix spinach, ricotta cheese, basil, egg, garlic, pepper, mushrooms and burger.

  3. Distribute spinach mixture among the eggplant slices. Roll up each slice and place in baking dish, seam sides down.

  4. Cover with marinara, foil and bake for 20 minutes. Remove foil, add cheese and bake 10-15 minutes.
