This recipe is something I thought up to get rid of the eggplants and use the ricotta before it spoil. Success. It makes 8 generous servings

Recipe Ingredients for Eggplant roll-up with Queso Fresco and Pasta Sauce

840 gram eggplant, sliced 1/4"-inch thick
1/2 cup all-purpose flour
1/4 cup canola oil
1/2 tsp sea salt
16 oz fat-free ricotta cheese
26 oz (Hunt's) pasta sauce garlic Herb
120 gram onion, chopped
10 gram garlic, minced
1 tsp fresh oregano
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
2 tbs (Kirkland) Pesto
1 1/2 tbs unsalted butter
3 tbs all-purpose flour
8 oz (Kirkland) soy milk
1 oz Parmesan cheese, grated
3 oz low fat mozzarella
6 oz Queso Fresco

Recipe Directions for Eggplant roll-up with Queso Fresco and Pasta Sauce

  1. Slice the eggplant 1/4"-inch thick. sprinkle with a little salt and let drain for about 30 minutes. Cut up the outside smaller slices into little squares. Reserve separately.

  2. Blot the slices with paper toweling before proceeding.

  3. Heat the canola oil in a deep frying pan.

  4. Lightly dip the blotted slices into the AP flour and fry for about 30 seconds. again, blot on paper toweling to eliminate as much as the oil as possible.

  5. Meanwhile, chop the onion, mince the garlic.

  6. Place about 1 tsp of the oil into a separate saute pan with about 1 tsp of the oil. Add the reserved egg plant pieces, onions and garlic and cook over medium high heat until the onions and eggplant are soft. Add the pesto sauce along with the pasta sauce and stir well to combine.
