Adapted from Australian Women's Weekly website. Gluten-free. Several steps, but yummy.

Recipe Ingredients for Eggplant, Roasted Tomato, and Leek "Lasagna"

3 eggplants, 1 cm slices
2 leeks, sliced finely
1 large onion, chopped finely
4 cloves garlic, crushed
8 roma tomatoes, quartered
2 tablespoons tomato paste
1/4 cup finely shredded fresh basil leaves
1 tablespoon smart balance lite
1 tablespoon olive oil

Recipe Directions for Eggplant, Roasted Tomato, and Leek "Lasagna"

  1. Salt eggplant slices and allow to sit 30-60 minutes to draw out moisture. Rinse well and dry on towels.

  2. Broil in batches until lightly browned on each side.

  3. Meanwhile, roast tomatoes in 400 F oven 35-45 minutes: toss in olive oil and season lightly with salt, if desired.

  4. Cook onion and half of garlic in half of smart balance until tender. Process onion and garlic mixture with roasted tomatoes, tomato paste, and basil (I left mine considerably chunky).

  5. Return tomato sauce to pan and simmer 20-25 minutes, until slightly thickened.

  6. Melt remaining smart balance and cook remaining garlic and leek until slightly caramelized.

  7. Layer ingredients in 8x8 baking dish in this order: eggplant, leek mixture, tomato sauce; aim for 3 layers. Top with final layer of eggplant.

  8. Bake, uncovered, 30 minutes. Allow to cool 10-15 minutes before slicing.
