Recipe Ingredients for Eggplant 'Relish'

2 average eggplant Japanese Eggplant
1/3 cup sliced Jalapeno Pepper
2 pepper Peppers, Hot Chili, Green
3 medium (4-1/8" long) Onions, Spring Or Scallions
6 cloves, raw Garlic
1 lemon yields Lemon Juice
1 tbsp Red Wine Vinegar, Organic
1 1tsp Olive Oil

Recipe Directions for Eggplant 'Relish'

  1. Broil vegetables turning once until skin is charred.

  2. Place damp cloth over vegetables to until cool enough to handle.

  3. Rough chop vegetables, squeeze garlic out of peels.

  4. Toss with lemon juice, wine vinegar and fresh ground pepper.

  5. Heat olive oil in skillet and cook until heated evenly and flavors combined.
