Not quite ratatouille, not quite parmigiana, but definitely tasty!

Recipe Ingredients for Eggplant Ratatouille/Parmigiana

1 eggplant
3 medium tomatoes
1 medium white onion
1 clove garlic, minced
2 tbsp olive oil
1 tsp basil
1 tsp thyme
1 tsp rosemary
1/4 cup cheddar cheese
8 oz spaghetti sauce

Recipe Directions for Eggplant Ratatouille/Parmigiana

  1. Cook all the veggies, minus the tomatoes, in oil to lightly brown. Add the spices.

  2. Add a little olive oil to the bottom of a baking dish. Layer the veggies, add tomatoes.

  3. Top veggies with spaghetti sauce, top with cheese. Cover the dish and place in the oven at 400 degrees.

  4. After 20 min, remove the cover to brown the cheese.
