added tomato paste and extra can of 14.5 oz. petite diced tomatoes to original recipe. Also, threw in a little white wine to thin sauce

Recipe Ingredients for Eggplant Ragout

1 large eggplant, cubed
1/2 cup chopped onion
1 tsp. minced garlic
2 tbsp. olive oil
42 oz. diced tomatoes
6 oz. tomato paste
1/2 tsp. salt
3/4 tsp. pepper
1 tsp. oregano

Recipe Directions for Eggplant Ragout

Dice onion and peel/cube eggplant. Cook in skillet in oil with garlic for ~5 minutes until eggplant is tender. Add tomatoes, paste and spices. Simmer until done.
