Recipe Ingredients for Eggplant Quinoa Bake

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
2 large whole (3" dia) Tomatoes, Red, Ripe
1 large Onions
2 medium Squash, Summer, Zucchini, Includes Skin
3/4 cup Yellow Squash
0.5 cup (uncooked) Quinoa
1 tbsp Extra Virgin Olive Oil
1 cup Shredded Mozzarella
2 clove Garlic
2 cup Vegetable Broth
2.5 fl oz Wine, Table, White

Recipe Directions for Eggplant Quinoa Bake

  1. In a 9x13 baking dish, drop in quinoa and spread it around. Add your water or broth and wine.

  2. Peel eggplant and slice into 1/2 inch thick rounds. Lay on a baking sheet, sprinkle with salt and pepper and drizzle oil lightly. Set oven to broil and put the eggplant slices in the oven for about 10 minutes, turning once when they begin to brown, and when they're slightly dry.

  3. Set oven to 400

  4. Layer the eggplant on top of the quinoa,

  5. Cut zucchini and yellow squash into 1/4 inch thick rounds and layer on top of the eggplant.

  6. Slice onion into half-moons, break up the half rings and sprinkle over top.

  7. Mince garlic and scatter on top.

  9. Season with herbs and drizzle with more olive oil

  10. Bake at 400 for 30 minutes. At 20 minutes, check your liquid level and make sure the quinoa isn't dry, add more liquid if needed.

  11. cover the top with cheese and put back in for another 5-10 minutes, depending on how brown you like your cheese - I like mine like pizza- very melty and browning on top.

  12. Allow to sit for five to ten minutes, cut into large squares and serve - makes four generous servings.
