Eggplant and Prosciutto Pizza Recipe

Serves 4 if you're better at rolling the crusts out thinly than I am. As made, it served 2-3 as a main course.

Recipe Ingredients for Eggplant and Prosciutto Pizza

16 oz pizza dough
1 japanese eggplant
1/3 c tomato sauce
1 oz prosciutto
1 T olive oil
1/4 c onion, sliced
1 clove garlic, minced
1 c shredded part-skim mozzarella cheese

Recipe Directions for Eggplant and Prosciutto Pizza

  1. Saute sliced onions until well-browned. Some should be crispy.

  2. Preheat oven to at least 450 degrees. Hotter is better, and a pizza stone is essential. It's best if you transfer the pizza with a peel or cookie sheet sprinkled with cornmeal directly to the preheated pizza stone.

  3. Wash and dry eggplant. Slice into very thin slices with a mandoline. Place slices on a paper towel, then sprinkle with a little salt to help draw out the water. Blot with a paper towel to remove water and salt once beads of water start to form (about 10 minutes)

  4. Prepare dough as directed by package/recipe.

  5. Sprinkle minced garlic and onions over dough. Spread sauce to within 1/2" of the edge. Top with strips of prosciutto and eggplant slices, then sprinkle cheese over all.

  6. Bake 8-10 minutes, or until crust is browned and cheese is bubbly and golden.
