From Veganomicon but with a bit less oil than called for in the original recipe. Also cut down from 6 to 8 servings to 3 to 4, 3 for purposes of logging :)

Recipe Ingredients for Eggplant-Potato Moussaka with Pine Nut Cream

1/2 pound eggplant
1/2 pound zucchini
3/4 pound potatos
1/8 cup olive oil
1 cup shallots
2 cloves garlic
1 1/2 ounces red wine
15 ounce diced tomatoes
1 teaspoon oregano
1/8 teaspoon cinnamon
5 grams bay leaf
1 teaspoon salt
1/2 pound silken tofu
1/4 cup pine nuts
1 1/2 tablespoon lemon juice
1/2 teaspoon arrowroot
1/4 teaspoon white pepper
1/4 cup bread crumbs

Recipe Directions for Eggplant-Potato Moussaka with Pine Nut Cream

  1. Slice all the veggies lengthwise.

  2. Lightly salt the eggplant and let it sit to sweat.

  3. Line baking sheets with parchment paper.

  4. Brush veggies with oil and bake on sheets in a 400 degree oven. Bake eggplant and zucchini about 15 minutes till tender.

  5. Bake potato slices about 25 minutes.

  6. Meanwhile make the sauce by sauteing shallots and garlic in the remaining olive oil.

  7. Add the wine and simmer for about 3 minutes.

  8. Add the canned tomatoes (crushed), oregano, cinnamon, bay leaf and salt to taste.

  9. Partially cover and cook about 15 minutes stirring occasionally.

  10. In a food processor, combine lemon juice with pine nuts.

  11. Add tofu and arrowroot, nutmeg, a pinch of salt, and white pepper.

  12. To assemble, layer 1/2 the eggplant, potatoes, sauce, bread crumbs, then all the zucchini.

  13. Make another layer of eggplant, potatoes, sauce and bread crumbs.

  14. Spread with pine nut cream.

  15. Bake at 400 degrees about 35 to 40 minutes until topping is slightly brown and perhaps cracked a bit.

  16. Cool 10 minutes before serving.
