Recipe Ingredients for Eggplant Portabella

7 2/5 oz Mushrooms, Portabella
8 3/5 oz Onions
5 4/5 oz Celery
12 oz Eggplant
2.12 oz Kirkland Basil Pesto
14 1/2 oz Organic Tomatoes
1 serving Tomato Paste
3 oz Whole Grain Rotini
3 oz Whole Grain Penne
1 oz White Wine
1 oz Olive Oil

Recipe Directions for Eggplant Portabella

Saute onions with mushroom and celery with some water. Add diced eggplant, Cook pasta separately till aldente. Add cooked pasta to veggies, add diced tomatoes, tomato paste, pesto wine and some italian seasoning to taste. Serve hot.
