Eggplant & tomatos over pasta

Recipe Ingredients for eggplant pomodoro

2 tbsp Extra Virgin Olive Oil
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
4 medium raw Plum Tomato
2 clove Garlic
3 tbsp Green Olives
2 tbsp Vinegar red wine
1 tsp Salt, Table
1/2 tsp Pepper, Black
1/5 tsp Crushed Red Pepper
1/4 cup leaves, whole Basil, Fresh

Recipe Directions for eggplant pomodoro

Heat oil, add eggplant (cubed w/skin) and cook until softened - about 5 min. Add garlic, cook 1 min. Add tomatos, olives, vinegar, capers, salt, pepper, crushed red pepper and cook until tomatoes break down, 5-7 minutes. Spoon over pasta and serve
