Recipe Ingredients for eggplant pomodoro (with ground turkey)

2 tbsp extra virgin olive oil
1 eggplant, medium, cut into 1/2 inch cubes
1 pound lean ground turkey
4 plum tomatoes, diced [11883?size=8]
4 tbsp green olives, pitted and chopped
2 tbsp red wine vinegar
3/4 tsp salt
1/2 tsp black pepper
1/4 tsp crushed red pepper
1/4 cup parsley, chopped

Recipe Directions for eggplant pomodoro (with ground turkey)

  1. Heat oil in non stick skillet.

  2. Add eggplant and cook about 5 minutes. Add garlic and cook about 1 minute.

  3. Add tomatoes, pre browned turkey, olives, vinegar, salt, and peppers. Sautee until tomatoes begint to break down.

  4. Serve over pasta.
