Eggplant Pizzaiola Recipe

Eggplant is the base, to be topped with classic pizza toppings of your choice.

Recipe Ingredients for Eggplant Pizzaiola

2 pounds eggplant
2 tbs olive oil
2 tbs wheat germ
1 cup tomato sauce
1/2 cup mozzarella cheese

Recipe Directions for Eggplant Pizzaiola

  1. Peel and slice the eggplant

  2. Arrange the slices, overlapping to make a solid surface, in a pizza pan or baking sheet that has been sprayed with non stick spray.

  3. Brush the tops lightly with olive oil

  4. Sprinkle the wheat germ evenly as possible

  5. Place in a preheated 350 F oven for 10 minutes to precook the eggplant. Remove from the oven.

  6. Top with the tomato sauce, cheese and any other toppings you like

  7. Bake at 400 F for about 10 to 15 minutes, until the eggplant is soft and the top is bubbling.
