Recipe Ingredients for Eggplant Pizza

4 cups eggplant
1 egg
2 whole wheat english muffins
4 tbsp ragu organics
4 oz low fat mozzarella
4 tbsp low fat parmesan

Recipe Directions for Eggplant Pizza

  1. slice 1/4 thick eggplant slices. Coat in egg, then in breadcrumbs.

  2. bake in 350 degree for 20 minutes, flipping halfway through

  3. toast english muffin.

  4. add eggplant slices to the english muffin, add ragu, and both types of cheese.

  5. bake an additional 5 minutes or until fully melted and bubbly
