Recipe Ingredients for Eggplant Pizza

3 tbsp Parmesan, Grated Cheese
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
3 serving Diced Tomatoes
3 tsp Pepper, Red Or Cayenne
1 tsp, ground Basil, Dried

Recipe Directions for Eggplant Pizza

  1. Preheat oven to 400 degrees

  2. Spray a baking sheet with a little oil spray

  3. cut eggplant into discs, about 1/2 inch thick

  4. spread most of or all of a can of diced tomato, preferably with garlic and onion variety

  5. top with about 3 tbsp of parmeasan cheese*

  6. bake in the oven for 22 mins

  7. *use mozzarella in if desired
