From Mark's Daily Apple - It doesn?t get much easier than pizza ? and this one is healthy too!

Recipe Ingredients for Eggplant Pizza

1 eggplant, large
1 cup mozzarella, shredded
8 oz tomato sauce or store-bought marinara sauce
1 tsp basil
1 tsp oregano

Recipe Directions for Eggplant Pizza

  1. Slice the eggplant lengthwise, making probably 6-8 slices about inch thick.

  2. Place on a greased cookie sheet and place under a broiler.

  3. Broil until light brown.

  4. Remove, flip and cover with tomato sauce, basil, oregano and mozzarella cheese.

  5. Place back under the broiler. Feel free to add more toppings here ? peppers, onions, pepperoni, diced ham ? whatever your favorite pizza is, feel free to add it here! Should serve 3-4 people depending on how big your eggplant is.
