Recipe Ingredients for Eggplant Pesto Stacks

1/2 eggplant
4 tblsp Basil Pesto
1/2 cup Mozzarella, Part Skim Milk, Low Moisture Cheese
1/4 cup parmesan, hard cheese
1/2 tsp salt

Recipe Directions for Eggplant Pesto Stacks

  1. Slice eggplant to 1/4 inch thick, discarding any slices with dark seeds.

  2. Salt slices, let stand to draw out moisture, pat dry with paper towels.

  3. Roast for 6 minutes each side in 400 degree broiler oven.

  4. Arrange on foil covered pan 4 stacks. Eggplant, 1 tbsp pesto, mozzarella, another slice of eggplant, and top with shredded parmesan.

  5. Heat through in warm oven for 5 minutes and serve
