Eggplant and whole wheat penne and spaghetti sauce.

Recipe Ingredients for Eggplant Penne

14 1/2 oz Penne, dry
1 medium eggplant, cubed
1/4 cup extra virgin olive oil
1/3 cup onion, diced
2 garlic cloves, chopped
26 1/2 oz Tomato Sauce
1 dash of red pepper flakes
1 dash of kosher salt
1 dash of italian herb seasonings

Recipe Directions for Eggplant Penne

  1. Boil penne per box instructions.- 11mins

  2. saute onion and garlic in olive oil till translucent

  3. add eggplant to onion mixture (if needed) add extra olive oil to coat eggplant

  4. coat for about 5mins to soften but not mushy

  5. then add spaghetti sauce, other seasonings to taste.

  6. serve pasta then top with eggplant sauce.
