1 medium eggplant
1 teaspoon onions, grated (or you can use minced onion)
1/2 cup breadcrumbs
3 tablespoons flour
1 teaspoon baking powder
1 egg, beaten
1 pepper

Recipe Directions for Eggplant Patties

  2. 1.Peel eggplant and cut into small pieces.

  3. 2.Boil in salted water until tender.

  4. 3.Drain well and mash.

  5. 4.Stir in all other ingredients.

  6. 5.Spray non-stick skillet with cooking spray, or add a small amount of oil.

  7. 6.Drop teaspoonfuls of eggplant into skillet and fry on both sides until golden brown.
