Recipe Ingredients for Eggplant Pasta Sauce

2 tbsp olive oil
3 cloves garlic
3 cups eggplant, cubed
1 green pepper, chopped
1 1/2 cups cherry tomatoes, chopped
8 oz tomato sauce
15 kalamata olives
2 tsp dried oregano
1/4 tsp crushed red pepper
1 black pepper, to taste
1 tbsp tomato paste
2 cups dry white wine

Recipe Directions for Eggplant Pasta Sauce

  1. Heat oil in a large skillet.

  2. Add garlic, eggplant and green pepper. Saute for a couple minutes.

  3. Add remaining ingredients, stir and reduce heat to low.

  4. Simmer, covered, for one hour until sauce has reached desired thickness.
