Recipe Ingredients for Eggplant Pasta

1 large Eggplant
1 Salt
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 teaspoon red pepper flakes
2 small tomatoes, seeded and chopped
1/2 cup heavy cream
2 tablespoons basil
1/4 cup of grated parmesan
3/4 cup mushrooms
1 pepper

Recipe Directions for Eggplant Pasta

  1. Cut eggplant into pasta strips

  2. salt and let sit for 30 minutes

  3. heat oil in pan, add garlic, red pepper flakes, and mushrooms.

  4. add eggplant and tomatoes.

  5. add cream and increase heat to thicken.
