Eggplant in a yummy tomato sauce with cheese, tastes like lasagna

Recipe Ingredients for Eggplant parmigiana

2 tbsp oil
1 large onion, chopped (1 cup)
1 small green bell pepper, chopped (1/2 cup)
2 cloves garlic, finely chopped
30 oz whole tomatoes, undrained
16 oz tomato sauce
2 tsp dried basil leaves
1 tsp dried oregano
1/2 tsp salt
1/2 tsp fennel seed
1/4 tsp pepper
2 lb eggplant
1 large egg
2 tbsp water
2/3 c dry bread crumbs
1/3 c grated Parmesan cheese
1/4 c oil
2 c shredded mozzarella cheese (8 oz)

Recipe Directions for Eggplant parmigiana

  1. Heat oil in 3-qt saucepan over medium heat. Cook onion, bell pepper and garlic in oil 2 minutes, stirring occasionally. Stir in remaining ingredients, breaking up tomatoes with a fork or snipping with kitchen scissors. Heat to boiling; reduce heat. Cover and simmer 45 minutes.

  2. Heat oven to 350. Cut eggplants into inch slices. Mix egg and water. Mix bread crumbs and Parmesan cheese. Dip eggplant into egg mixture, then coat with bread crumb mixture.

  3. Heat oil in 12-inch skillet over medium heat. Cook half of the eggplant at a time in oil about 5 minutes, turning once, until light brown; drain. Repeat with remaining eggplant, adding 1 or 2 Tbsp oil if necessary.

  4. Place half of the eggplant in ungreased rectangular baking dish, 11x7x1 inches, overlapping slices slightly. Spoon half of the sauce over eggplant. Sprinkle with 1 C of the mozzarella cheese. Repeat with remaining eggplant, sauce and cheese.

  5. Bake uncovered about 25 minutes or until sauce is bubbly and cheese is light brown.
