Spaghetti topped with Eggplant stacked with a slice of Mozarella, a fresh tomato slice and smothered with Classico Tomato & Basil Sauce.

Recipe Ingredients for Eggplant Parmigiana

10 oz Mozzarella, Part Skim Milk, Low Moisture Cheese
32 oz Classico Tomato & Basil
2 whole Tomatoes, Red, Ripe - Raw, Year round
5 cups Spaghetti, Cooked, Enriched, Without Added Salt
1 Eggplant - Raw
4 tbsp Corn Meal
5 tbsp Olive Oil

Recipe Directions for Eggplant Parmigiana

  1. Use 12" x 18" Cookie sheet with baking rack

  2. Slice Eggplant into 10 1/2 inch slices

  3. Dip one side of eggplant slice in olive oil then dip same side into Corn meal.

  4. Place Corn meal side up on baking rack.

  5. Bake eggplant for 20 minutes at 360 degrees F

  6. Let cool then remove cooking rack from cookie sheet.

  7. Place cookie sheet upside down on 12" x 18" cooking rack and flip eggplant cornmeal side down onto cookie sheet.

  8. Slice Mozarella cheeze into 0 1 oz slices and place one slice on each eggplant.

  9. Slice Tomatoes by 10 and place one tomatoe slice on each eggplant with mozarella.

  10. Open 32 oz jar of Classico Tomato & Basil then dollup over each eggplant/mozarella/Tomato stack.

  11. Bake at 360 degree F for 30 minutes.

  12. Boil Spaghetti, drain.

  13. Place 1/2 cup of spaghetti on plate.

  14. place one Eggplant stack on Spaghetti.
