Recipe Ingredients for Eggplant Parmesian

8 cups eggplant
2 cups bread crumbs
4 tbsp flax seed
1/4 cup nutritional yeast
3 cups tomato sauce

Recipe Directions for Eggplant Parmesian

  1. slice the eggplant

  2. grind the flax to a powder

  3. add 2 cups of water to the flax and mix let stand for a few minutes

  4. dip eggplant in flax and coat in bread crumbs

  5. spray cookie sheet with oil

  6. bake at 425 for 15 minutes flip and bake for 10 minutes more

  7. layer eggplant and sauce in a caserole cover with tin foil

  8. cook at 350 to reheat between 20-230 minutes
