1 eggplant
1/2 cup italian breadcrumbs
1 egg, beaten
5 tbsp olive oil
1 cup pasta sauce
3 tbsp grated parmesean cheese

Recipe Directions for eggplant parmesean

slice eggplant and dip in egg and then bread crumbs. pan fry in oil. top with parmesean and pasta sauce.
