Recipe Ingredients for Eggplant parmesean

1 large eggplant
1/2 egg
1 tbsp 1% milk
1/2 cup quick oats
1 tsp garlic salt
1 tsp oregano
1 tsp basil
3 tbsp olive oil

Recipe Directions for Eggplant parmesean

Preheat oven to 370 degrees. Heat olive oil in a large skillet over medium high heat. Peel and slice eggplant. Whisk egg into a bowl and add milk. In a shallow dish, combine oats and spices. Dip eggplant into the egg mixture, then the oat mixture to coat. Place each slice into hot oil until browned on each side. Then place entire skillet into the oven for 10-15 minutes, or until eggplant is tender. Serve with pasta and marinara sauce.
