A lower fat variation of my favorite Italian dish

Recipe Ingredients for Eggplant Parmesean

1 large eggplant
2 egg whites
1/4 c. flour
1/2 c breadcrumbs, Italian style
16 oz. spaghetti sauce (your favorite flavor, I use basil and garlic)
1 c mozzarella cheese, low fat
1/4 c. Parmesan cheese

Recipe Directions for Eggplant Parmesean

  1. Cut eggplant into slices (cross ways) about 1/4 to 1/2 inch thick.

  2. Place a few slices at a time in a baggie containing the flour and shake.

  3. Dip the flour coated slices into egg white, and then into breadcrumbs.

  4. Place all slices on Pam coated baking sheet and bake at 350 until golden brown.

  5. Coat casserole dish with non-sick spray. Place a layer of eggplant on the bottom, cover with 1/2 the sauce, then 1/2 the cheese and Parmesan. Repeat with second layer.

  6. Bake at 350 until heated through and bubbly on top.
