Light version of eggplant parmesan

Recipe Ingredients for Eggplant Parmesan

16 ounces eggplant
1 cup plain bread crumbs
1 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup egg beaters
3 teaspoons extra virgin olive oil
1 cup Traditional Pasta Sauce
4 tablespoons mozzarella cheese

Recipe Directions for Eggplant Parmesan

preheat oven to 375. Spray a baking sheet with nonstick cooking spray. Mix bread crumbs with pepper and garlic powder. Slice eggplant into 1/2 inch slices. Dip into egg substitute and crumb mixture. Place on baking sheet and drizzle with the olive oil. Place in oven until golden and eggplant is tender about 15-20 minutes. Romove from oven and top with marinara sauce. Sprinkle with cheese. Place back in oven until cheese melts over the top. Take out of oven. Plate and enjoy.
