Recipe Ingredients for Eggplant Parmesan

1 eggplant
3 tbs. olive oil
1/4 cup pasta sauce
1/4 cup parmesan cheese (freshly grated)
1/4 cup grated mozzarella cheese

Recipe Directions for Eggplant Parmesan

Lightly fry 1 medium to large eggplant peeled and cut in 3 tablespoons of olive oil on medium heat until somewhat soft and tender. Then lay in glass baking dish. Pour 1/4 cup of ragu traditional spaghetti sauce over the eggplant. Then top with 1/4 cup of freshly grated parmesan cheese, and 1/4 cup of freshly grated mozzarella cheese. Bake in the oven until hot and cheese is melted, the sauce may thin just a bit when dish is done.
