Gluten Free, Flour Free, Rice Free, Eggplant Parmesan

Recipe Ingredients for Eggplant Parmesan

2 zucchini
24 oz Pasta Sauce
16 oz mozzarella
3 oz parmesan cheese

Recipe Directions for Eggplant Parmesan

  1. Slice eggplants in 1/4 thick slices (with skin). Set on paper towels and sprinkle with salt to let sweat for 30 minutes. Rinse and dry. Pour a little olive oil on pan and place slices on top. Sprinkle with more olive oil. Bake for 20 min at 350 flipping half way through.

  2. Layer sauce, eggplant, mozzarella, parm, and repeat. Bake for 45 min at 350.
