Recipe Ingredients for eggplant parmesan

1 medium unpeeled raw Eggplant
1.5 cup Bread Crumbs Italian Style
4 large Egg, Whole
0.25 cup Olive Oil
2.5 cup Four Cheese
1 cup Ricotta, Part Skim Milk Cheese
16 oz Mozzarella, Part Skim Milk Cheese

Recipe Directions for eggplant parmesan

Thinly slice eggplants into rounds. Dip in beaten egg and then into breadcrumbs, repeat. Layer in a baking dish with ricotta and pour sauce over it. Sprinkle with mozzarella cheese and bake covered for 30 minutes. Bake uncovered for another 20 minutes.
