My favorite way to have eggplant and especially when they are in season.

Recipe Ingredients for Eggplant Parmesan

1 eggplant, peeled (yield from 1-1/4 lb) Eggplant
0.5 cup Bread Crumbs Italian Style
0.25 cup Parmesan, Grated Cheese
1 large Egg, Whole
0.25 cup Milk, Reduced Fat, Fluid, 2% Milkfat
2 cup Tomato Sauce

Recipe Directions for Eggplant Parmesan

  1. Peel and slice the eggplant, salt and press for 30 minutes. Rinse completely. Mix together milk and egg in a pie pan and parmesan and bread crumbs in a separate pie pan. Dip the eggplant in egg mixture and then in breadcrumb mixture to coat. Place on a baking sheet coated with pan spray. Bake for 30 minutes at 400 degrees. Prepare the farfalle according to package directions, warm the tomato sauce.

  2. Serve eggplant and farfalle covered in sauce.
