Recipe Directions for Eggplant Parmesan

Slice eggplant long wise, let sit over night, dredge in egg whites then whole grain breadcrumbs, garlic powder, and parmesan cheese, bake in foil lined pan for 25 minutes, top w/ shredded low fat mozzarella then return to over to melt cheese for 3 inutes.
