Healthy version of eggplant parmesan 1 large eggplant 1 zucchini 8 cups of spinach 1 1/2 whole tomatoes 6 cloves of garlic 3/4 onion 1/2 cup grated parmesan

0.75 large Onions
0.75 medium Squash, Summer, Zucchini, Includes Skin
10 cup Spinach
1.5 serving Garlic Cloves
1.5 large whole (3" dia) Tomatoes, Red, Ripe
8 serving Parmesan Grated

Recipe Directions for Eggplant Parmesan

  1. slice the eggplant layering it in a pan

  2. then layer diced onions, zucchini, garlic, spinach, and tomatoes. Top with parmesan cheese. Bake at 350 for about 1 1/2 hours.
