Eggplant Parmesan Recipe

Eggplant, tomato & cheese dish

Recipe Ingredients for Eggplant Parmesan

2 tbsp olive oil
1 garlic clove
1 small eggplant, peeled & cut into 1/4 inch slices
1 tbsp basil
1 tbsp Parmesan cheese
1 medium tomato
1/2 cup shredded mozzarella cheese

Recipe Directions for Eggplant Parmesan

  1. Combine oil & garlic; brush on both sides of eggplant.

  2. Place on greased baking sheet.

  3. Bake @ 425 degrees for 15 minutes, turn and bake another 5 minutes until golden brown.

  4. Place half of eggplant in greased 1 qt. baking dish.

  5. Sprinkle with half of the basil & Parseman cheese.

  6. Arange tomato slices over top, sprinkle remaining basil and Parmesan and half of mozzarella cheese on top.

  7. Layer remaining eggplant & top with remaining mozzarella.

  8. Cover & bake for 20 minutes at 350 degrees.

  9. Remove cover & bake additional 5 minutes.
