yummy, but not super healthy version

Recipe Ingredients for Eggplant Parmesan

1 Eggplant
1 cup flour
1 cup italian bread crumbs
2 eggs
1/4 cup olive oil
2 cups tomato sauce
1 clove garlic
1 tsp salt
1 tsp dried oregano
1/4 cup parmesan cheese
2 oz Mozzarella cheese

Recipe Directions for Eggplant Parmesan

  1. Slice eggplant into circles

  2. Dredge in seasoned Flour

  3. Dredge in Eggs

  4. Dredge in Italian Bread Crumbs

  5. Heat skillet with Olive Oil

  6. Fry each side of Eggplant until browned

  7. Mix tomato sauce, salt, oregano and garlic in food processor

  8. Pour sauce in bottom of greased baking dish

  9. Heat oven to 400F

  10. Placed fried eggplant in dish, pour more tomato sauce on top

  11. Place Mozzeralla and Parmesan on top of each slice

  12. Bake for 20 minutes
