Recipe Ingredients for Eggplant Parmesan

2 eggplants
1/2 cup flour
1/2 cup vegetable oil
1/2 cup parmesan cheese
1 1/2 mozzarella cheese
58 oz organic plum tomatoes (2 28oz cans)
2 tbls olive oil
2 garlic cloves
1/2 chopped onion
1 tsp basil
1 tsp oregano
1/2 tsp chili flakes
1/2 cup red wine

Recipe Directions for Eggplant Parmesan

  1. heat olive oil in sauce pan

  2. add garlic

  3. add onions

  4. fry until soft

  5. add herbs

  6. add tomatos

  7. add wine

  8. simmer for about 30 minutes

  9. slice eggplants (you may drain them for about 1 hour, sprinkle some salt on them)

  10. fry in veg oil

  11. add to casserole dish

  12. layer like making lasagna

  13. with parmesan between layers

  14. top with mozzerella

  15. cook 30 minutes at 350 degrees
