Recipe Ingredients for Eggplant Parmesan

1 large eggplant
1/2 cup bread crumbs
4 eggs
1/2 cup canola oil
1 cup skim milk
1 cup all purpose flour
4 cups tomato sauce
8 oz part skim mozzarella cheese
16 oz ricotta cheese
4 cups fresh baby spinach

Recipe Directions for Eggplant Parmesan

Fry eggplant, layer with sauce, cheese, and spinach. Bake at 350 for 45 minutes or until done.
