Eggplant Parmesan, serve with pasta sauce and noodles.

Recipe Ingredients for Eggplant Parmesan

1 medium eggplant, sliced
2 oz mayonnaise
2 oz Italian bread crumbs
1/2 oz parmesan cheese

Recipe Directions for Eggplant Parmesan

  1. Slice eggplant.

  2. Mix bread crumbs and parmesan cheese.

  3. Coat sliced of eggplant with mayonnaise and the coat with bread crumb mixture.

  4. Place on cookie sheet.

  5. Cook at 350 for 20 minutes, flip and cook for an additional 20 minutes.

  6. Add shredded cheese and broil if wanted.
