Grilled eggplant in tomato sauce with a crust of melted cheese.

Recipe Ingredients for Eggplant Parmesan

1 small eggplant
3 tablespoons tomato sauce
1/2 cups mozzarella

Recipe Directions for Eggplant Parmesan

  1. Slice eggplant and place on a foil covered baking sheet.

  2. Put the sheet under the broiler for 3 minutes.

  3. Flip each slice over and broil another 2-3 minutes.

  4. Line the bottom of a glass or ceramic dish with 1 tbsp tomato sauce.

  5. Place eggplant slices in layers over the sauce.

  6. Sprinkle cheese over the top.

  7. Place in the oven at 425 for 10 minutes or until the cheese is a golden brown.
